Left-Over Roastie Balls

I really love food :)  Like R.E.A.L.L.Y, especially when I know I'm fuelling my body with something both tasty and healthy.  A regular part of this blog will be recipe ideas that you can try at home.  I am committed to keeping them healthy and simple so that you have a deep well of recipes that you can dip into when you've run out of ideas, or energy.  They will all be tested on my children first, so should be kid-friendly too!

The other night we had some leftover roasted kumara and pumpkin so I came up with this recipe for Left-Over Roastie Balls using my (favourite!) Revive Cafe Cookbook for inspiration.  These are cheap to make and super simple – just how we like it!




Left-Over Roasties (1-2 Cups worth)

1 can Brown Lentils

2 Cloves Crushed Garlic

1 Onion diced

2 Tsp Cumin

1/2 Cup Sesame Seeds

2 Tbsp Pumpkin Seeds (optional)


Saute onion and garlic until clear

In a bowl mix onion, garlic, left-over roasties, and lentils.  Use your hands to squish it all together until it binds.

Roll into balls in your hands and then roll them in sesame seeds and put onto an oven tray.

Bake for 30 minutes at 150C (300F)

I served this over wholegrain organic couscous with a salad, and drizzled the balls with a homemade tomato sauce, delish!
